Black bean Sweet Potato Quesadillas

Sorry for the lack of posting but with the end of the school year near and a kindergartener learning online at home we have been a little busy over here!  This was not a typical mean for us as it was meatless but we’ve been trying to mix up our meal plans with a meatless meal once a week. This was a delicious sweet potato and black bean quesadilla. Lots of flavours and so filling!  We have been trying to incorporate one meatless meal a week which has been fun and challenging. It has really forced me to think out of the box with different meal ideas and this one was just too good not to share. It is kid friendly which is very important in our house.  I also really liked this meal as I was able to bake the sweet potato a head of time and then have everything ready for when it was time to make dinner. It was really easy and a lot of fun to make them together.  Ingredients: 1 sweet potato 1 tbsp busters BBQ rub  I can black beans or kidney beans drained and rinsed  Shredded cheese  Diced r

Avocado Salad

I first had a dish like this while on a trip to Mexico, when traveling was a safe activity. I remembered it tasted fresh and light and loved the simple flavours. I came home from the trip and just remember thinking I can recreate that! This is one of our favourite spring/summer salads and it’s so fresh and reminds us of warmer weather.  First you want to chop your veggies (peppers, onion, cucumber, and tomatoes) and let them soak in vinegar and salt & pepper for at least 30 minutes. Once you're ready to serve you will scoop out the 1/2 avocado and put it on the plate. I like to put them with the pit spot up so I can fill it with the veggie mixture. This way it also catches some of the vinegar juices as well.        Ingredients: - 2 avocadoes halved - 1/2 2 different colored peppers chopped  - 1 tomato diced  - 1/2 cucumber chopped - 1/2 red onion - 1/2 - 3/4 cup white vinegar  - pinch of salt and pepper * You can adjust the flavour by adding different veggies or even trying a b

Banana Cinnamon Muffins

These muffins have been a hit in our house for a couple of years now. My one son (who we call the muffin man) asks for them all the time. I love this recipe too because it is so versatile. I have made them plain, added a cinnamon sugar topping, added chocolate chips and even raspberries or blueberries. My favourite is adding a blueberry raspberry mixture. My children obviously love the chocolate chips or cinnamon sugar topping.  I honestly love how easy and versatile this recipe is. It seems to taste delicious no matter what I add to it. I also love that it can be made in one bowl and I have less dishes to do in the end. BUT my absolute favourite part about this recipe is how easy it is to make with my boys.
