June 8 - 12 COVID - 19 School Closure

Last week we learnt a lot about snakes and I feel like I appreciate them a little more. My son has really started to like the Wild Kratt videos so I will try to incorporate one of those cartoons on days that I can. This week he wants to learn about big fast wild Cats. So off we go to learn about Big Wild Cats!!



















I have noticed that with the nicer weather we have been less motivated to do our school work so I am going to tone it down a little. He is still getting work form his teachers so I will be posting less Math and STEM activities as he does those with his class. I will continue with reading and writing as these are the subjects he struggles with the most and I would like to keep up the work we have started. We got another Fun Food Friday package and the boys loved it! We made apple cookies and they were a huge hit! We really appreciate all the hard work that the community partners are doing to ensure the kids are still having fun at home. It definitely helps to lift the spirits in our house and I can only imagine that it helps a little in all houses.


My oldest son is really starting to get the hang of reading. After we watch our video and read our book on EPIC he then reads me 2-3 levelled books on EPIC. He really is working hard at looking at the words and pictures to see what would make sense in the sentence.


My youngest has turned into a little chatter box. He loves talking and exploring his language! I am going to start adding in some colouring time for him as well as it is important for him to start learning his way around a crayon and some paper.



Some people in town have started painting rocks and hiding them around town (specifically on the walking path we have here). My sons love when we go out to see if rocks have been moved, if there are new ones to read messages on, etc. So I thought it would be fun to paint some rocks of our own and either hide them around our neighbourhood or add some more to the walking path. This will be our Monday craft!

Black bean Sweet Potato Quesadillas

Sorry for the lack of posting but with the end of the school year near and a kindergartener learning online at home we have been a little busy over here!  This was not a typical mean for us as it was meatless but we’ve been trying to mix up our meal plans with a meatless meal once a week. This was a delicious sweet potato and black bean quesadilla. Lots of flavours and so filling!  We have been trying to incorporate one meatless meal a week which has been fun and challenging. It has really forced me to think out of the box with different meal ideas and this one was just too good not to share. Banana Cinnamon Muffins

These muffins have been a hit in our house for a couple of years now. My one son (who we call the muffin man) asks for them all the time. I love this recipe too because it is so versatile. I have made them plain, added a cinnamon sugar topping, added chocolate chips and even raspberries or blueberries. My favourite is adding a blueberry raspberry mixture. My children obviously love the chocolate chips or cinnamon sugar topping.  I honestly love how easy and versatile this recipe is. It seems to taste delicious no matter what I add to it. I also love that it can be made in one bowl and I have less dishes to do in the end. BUT my absolute favourite part about this recipe is how easy it is to make with my boys. They both love to help out in the kitchen and this is a simple enough recipe for them to help out with.  INGREDIENTS: - 2/3 cup sugar - 1/2 cup vegetable or canola oil - 2 large eggs - 2 bananas mashed - 1 tsp vanilla - 1 2/3 cups flour - 1 tsp baking soda - 1 tsp cinnamon - 1/2 ts

Fresh Tomato Marinara/Pizza Sauce

 We LOVE pizza in this house and any way to add extra flavour to make it better I am all over that. We had an abundance of tomatoes come off our tomato plants this year and were needing to come up with more ways as to how to use them. I was able to make soup and pasta sauce and then thought that this pizza sauce would be another great option as we eat pizza pretty regularly. I also froze a lot of tomatoes as it was hard to keep up with them all turning red at the same time. Frozen tomatoes work well with this sauce as well as they are getting cooked down anyway.  This sauce is a runnier sauce as I'm not a fan of a super thick pizza sauce and love how it adds just a touch of flavour to the pizza. If you are wanting it to thicken more, add some tomato paste to help it thicken.  Ingredients: 16 cups chopped tomatoes (Garden fresh add a lot more flavour) 1 onion 1-2 full heads of Garlic (I LOVE garlic so I tend to add more) 2 TBSP Olive Oil  2 TBSP Italian seasoning 1 TBSP Basil  2 TBS
